They can totally switch sides at the last second. But the second they attack security members, their clearance will be revoked, so they'll be unable to use the elevator. As far as stealing it via RP, I'm afraid the research can only be stolen on the grid itself (yes there's more than a vial, but everything that isn't stolen from the hands of the last scientist will be destroyed. Maybe a thumb drive, some papers, and some samples / prototypes). But that'll only happen if people push the slider all the way down to -100%, which will be easier if people RPed it. But no, the short of it is you won't be able to RP being the one who made off with the last remnants of the research unless you're the one who kills the last scientist. This is one instance (the last scientist having the only workable, remaining data) where the grid and the RP must match up. The militia won't be able to access the labs until the blast doors are blown open, so there's no chance of being sneaky in the meantime and pocketing some random research.
But you could totally join the security forces, try to hold off the invaders, and then at the last second decide it's futile, rush in and kill the last scientist on grid and make off with the research before anyone can stop you. That'd make a pretty awesome RP afterwards.
