It probably smells really bad. Mooncalves are corpses, so are feral vampires and zombies, so none of them turn to dust. The military doesn't clean them up, though the area is quarantined off, so the general populace wouldn't be going in to snoop around anyway. I can't say one way or the other whether or not D'Artois clean up the streets - though if there were PC groups that wanted to take on that role, I think it would offer something unique to the RP, but that's not something I'd be dipping my fingers into as a storyteller.
As far as DNA goes: Yes, DNA could be extracted from the corpses, but all it would really tell anyone is that they're human and dead. Without a spirit inhabiting a zombie's body it's just a corpse.
